Good Cooking

Winter is here and I feel a chill down my spine just thinking about it. I always feel a little under the winter when it first hits.
A little more tired all of a sudden and the general blahs. [crymore] There is only one cure for the these winter chills. Some good thick soup.
First you need some stock. A word on stock. If you don't already make your own stock then you better start, its awesome. The soup is cream of vegetable soup.
First put the burner on low and throw in 1/2 stick of butter into a large pot(I also like to start the soup by lighting a candle, it really keeps with the onion burn. Chop up 2 medium sized onions and 2-3 carrots and/or Parsnips. Mix with the butter cover.
Leave on the lowest heat for about 30-45 minutes, until the vegetables have softened. Now add 2 quarts of that good' ol homemade chicken stock. Throw in a hand full of fresh thyme sprigs and 3-6 medium potatoes. This is when I invoke healing properties into the soup. Depending on my mood is the extent of the ritual. Do what works for you.
Bring to a boil and skim the funk that floats up. Turn down the heat, cover and let cook, 30-45 min. Add some zucchini's after the potatoes have cooked 20 or so minutes. when the zucchini's are tender and the potatoes are soft the soup is done. Take a potato masher or blender to the soup. Beat until creamy. Mix a spoonful of sour cream into a poured bowl for bonus points.

Serve with some buttered bread, a fire and a book.
