How do you tell what you desending and ascending signs are and what do they represent? What do the north and south nodes represent? Which is the dragons head?

Well, The North node is the "dragons head", and the south is the "dragons tail".
The ascending sign is the one in the first house and the descending sign is the one in the 7th.
The ascending sign represents how you look at yourself, or how you want the world to see you. The decending sign represents the kind of people you tend to want to have around you.

i'll give it a shot...
the ascendent is the zodiacal degree at the moment of birth (it is the sign rising above the eastern horizon)... and the descendent is the sign that is sinking below the western horizon. you need to know the exact moment of birth (compensated by the location) and a ephemeris to determine the exact sign and degree. some books on astrology (Liz Greene's Astrology for Lovers comes to mind) offer tables of approximate rising signs while many "cast your own horoscope" books will give you the calculations for the ascendent. you need to know the position of the ascendent to calculate the houses and depending on your method (even or placidus house system) you may also need to determine the mid-heaven and nadir.
as you describe, the ascendent traditionally indicates appearance and instinctive expression to things (it is the point that initiates the first house) while the descendent indicates your shadow self or partner. if you were a jungian, you might say that the ascendent is the ego, the descendent is the anima/animus and the sun is the self. diffenent astrologers will have different interpretaions (the midheavena the nadir are also said to indicate the maternal and paternal archetypes... how you relate to you mother and father).
the lunar nodes represent certain points in the moons orbit (always exactly 180 degrees opposition to one another). in hindu astrology they are associated with eclipses and are called Rahu and Ketu and are associated with karmic debts... from memory, i think that the south node indicates ancestral-genetic karma and the north node indicates opportunies for working through karma. they are not much used in western astrology anymore but tend to be used to indicate where you have come from and where you are going. to find these points you will need a specialised ephermeris (i'm sure there some on the web). incidently, every planet (except the sun) has nodes... and are sometimes called shadow planets.
its been a long time since i've studied astrology (and even then i didn't really believe in it) so i would suggest you search the web if you haven't already done so. otherwise make an appointment with a competent astologer and ask them to demonstrate to you how they construct a horoscope (its a lot easier than everyone makes out and really is more dependant on the intuition of the astrologer than mathematical science).
