Dreaming a little Dream

I know very little about the science behind sleep and dreams, but there are a couple of things I've read from various sources that don't seem to ring true to me. I was hoping to get your opinions on them.
First, I've heard that it takes an hour or so, after falling asleep, before one starts dreaming. I've had several occasions where I've laid down, closed my eyes, and immediately had a dream that seemed to last for an hour or more, but upon awakening and looking at the clock, no time, or at the most a few minutes had passed since I laid down. Not hypnogogic (sp?) images or daydreams, but full on, fully experienced dreams. Is this common? Anyone else here experience this?
Second, I've heard that most people dream in black and white. Is this true? I don't recall ever having a black and white dream. The ones that weren't in true color were very bright and vivid, almost neon and shimmering.
Again, I don't know much about the science of it all, and could have my facts bass ackwards, but this seemed to be a good place to ask these questions.

I seem to dream immediately upon falling asleep as well. I'm not aware that most people dream in black and white. As far as I know, I dream in color.

You cannot see while you are dreaming because your eyes are closed.
The problem is how you interpret this new and mysterious experience of dreams in terms of your five senses.
Dream experiences varies a lot from one person to another.

Well, in terms of my five senses, I dream in color. I can also read in my dreams believe it or not.

Of course my eyes are closed, otherwise I wouldn't be dreaming. :-D What I meant was that upon recalling my dreams, the memories are always in color. I recall one dream a couple of years ago, where I was sitting on a cliff overlooking the ocean. there were dolphins swimming below me, and animals, plants, and birds all around me. The colors and feelings were so amazing that I couldn't possibly find the words to descibe them. I just sat there for what seemed like hours, watching the scenery. This is still one of my most cherished memories, and even while lucid dreaming, I've been unable to recreate that place.
A couple of other things.
1. The instant dreams I was describing are still a rare occurance for me, usually only happening once every several months. 99.9% of the time I'm an insomniac, and lay in bed for hours before drifting off to sleep.
2. While my dreams are always in color, I sometimes (rarely) see faces and other things against the blackness when closing my eyes, while wide awake. These are usually in black and white.

Oddly enough, I don't recall ever trying to read anything in my dreams, so I don't know if it would be legible or just a jumbled mess to me. I'll have to summon myself a book next time I become lucid. Thanks for the idea.
