I'm prone to one Vanir, Freya (some spell it Freyja). Any goddess that can be a warrior goddess, the patron goddess of crops and birth, a Valkyrie, the goddess of sensual love, a comforter and escort of the dead to the afterlife, is associated with magic, prophecy, and wealth deserves my respect.
She was very egalitarian about her guests, the 1/2 of the dead that she claimed. She would go onto the battlefield to gather them up and take them back with her to spend the after-life in her home in perpetual rest and recreation. And unlike Wotan, she invited their wives or lovers to come and live with them.
It has been said that when Freya and the Valkyries rode on their missions, their armor caused the Northern Lights to shine.
She was a spectacular beauty, had numerous lovers, and was known for her appreciation of romantic music and stunning floral arrangements. And she liked cats, which is always a plus.
I like Freya for her persistence in exploring new things, for her willingness to defy convention, reminding us to go after the unexpected and forgotten. I think she's all about exploring all of your "existence", not trying to lock part of it away.
I've never been fond of the Aesir, since they seem to be a Graeco/Roman transplant to me. The story of their banishing Od sounds just like the typical Roman approach. I suppose they redeemed themselves a bit by putting Od in Valhalla after they got him killed, and permitting Freya visits.
I suppose for me she's the Norse equivalent to the Morrighan in all her aspects. But you didn't ask about the Celts
